Red Slaw Recipe

We like to call this our Rocking Red Slaw, a perfect addition to any lunch or dinner spread. 
 

Rudolf’s Rocking Red Slaw 

This recipe is dairy free, gluten free and refined sugar free. 


Ingredients

The salad base ingredients 

  • 1 large or two small beetroot peeled & grated
  • 2 carrots peeled and grated
  • 2 cups of finely sliced red cabbage
  • 2 cups of leafy greens including mint and
  • coriander finely chopped 

Simple citrus dressing

  • Fresh juice of one orange
  • Fresh juice of one lemon or lime
  • 1⁄2 cup of extra virgin, cold pressed olive oil
  • 2 Tbsp. balsamic vinegar, red wine vinegar or
  • apple cider vinegar
  • 1 tsp. honey (optional)
  • Unrefined sea salt and pepper

The optional extras

  • Finely chopped red onion
  • 1 clove crushed garlic
  • Pumpkin and sunflower seeds
  • Black sesame seeds
  • Sprouts

Directions

  1. In a salad bowl combine all base ingredients
  2. In a jar add salad dressing ingredients
  3. Shake well and pour over salad just before you serve.
  4. Garnish with optional toppings and serve.
