Green Egg and Ham Crepe Recipe

This recipe is geared towards people who function best with higher levels of protein and fats. People who do well on a higher protein/fat diet tend to have bigger appetites and usually wake up hungry. If this is you, you might like to order a big cooked breakfast when out at a cafe.

This recipe is dairy free, gluten free and serves 2.  

Green Egg and Ham Crepe

Ingredients

  • 4 eggs
  • 1 handful of mixed herbs (parsley, basil, mint)
  • ½ cup milk (or dairy-free alternative)
  • Salt and pepper 
  • 2 tsp butter or coconut oil, for frying
  • 4 slices of ham off the bone 
  • 2 cups salad greens

Directions

Combine all the ingredients into a blender and blend together to give the appearance of green eggs. Heat a medium size frying pan and melt in 1 tsp of butter, once the pan is hot add half the egg batter and swirl to cover the whole pan to form the crepe.

Once the crepe starts pulling away from the edges and the top become dry, use a spatula to flip and cook for 30 seconds on the reverse side.

Remove from the pan to a warm plate and cook the rest of the batter, adding the second teaspoon of butter to the pan first to prevent it from sticking.

To serve, lay ham inside each crepe and roll up, one crepe per person. Serve with salad greens.
