An easy way to make a yummy and nutritious lunchtime snack
¼ cup almonds, soaked overnight and drained
3 Tbs flaxseeds
¼ cup sunflower seeds, soaked overnight and drained
1/3 cup dried coconut
½ cup fine oats
½ cup sesame seeds
9 large dried figs, sliced
1/4 cup chopped dates
1/4 cup raisins
1 Tbs tahini
1 Tbs honey
Zest of one orange
2 Tbs water
- Grind the sesame seeds and flaxseeds in batches, in a food processor, coffee grinder or spice grinder until fine. You can also buy freshly ground flax seeds from most health food shops.
- Put the ground sesame in a food processor with the other ingredients except raisins. Blend on high speed until mixture has a crumbly texture. Add raisins pulse in so raisins remain mainly whole.
- Squeeze some in your fingers to see if it will form a ball. This mixture needs to be crumbly and only just moist enough to hold together when you press it. If it is too wet, add more ground sesame seeds, coconut or oats. If too dry, add a tiny bit of water.
- Press into a tin. Slice in squares and refrigerate until set. It is better to keep it stored in the fridge. It will soften a little in your lunchbox, but still firm enough when wrapped up as a seperate 'bar' to hold on to.
